Once seared, move your cowboy steaks to lower heat to allow them to finish cooking through. This process will take between 11-15 minutes on each side. Cook steak to desired doneness.

    Making BBQ cowboy steaks is easy using a reverse sear. Cook low-and-slow on indirect heat at 275°F until the steak reaches an internal temperature of 100°F. Then raise the heat to maximum and sear 2-3 minutes per side until your desired doneness is reached. If you want crosshatch grill marks, rotate the steaks 90 degrees halfway through each side.
    Sear steak on both sides until blackened, 8 to 10 minutes total. Transfer to oven and roast 15 to 20 minutes or until a meat thermometer inserted into center of steak registers 125 degrees for medium-rare. Transfer steak to a carving board and let stand at least 15 minutes before slicing and serving.
