    1. Wash the collard greens, remove the tough stem, and cut into ribbons.
    2. Heat a large skillet with olive oil, add the greens and salt, and stir until coated.
    3. Let the greens cook for about 30 seconds.
    4. Alternatively, add the greens to a large stock pot, cover with cold water, and simmer until tender.
    5. Add seasonings, fatback, and chicken stock (or butter) to the greens and simmer for 15 minutes more.
