  1. Here are the steps to make classic French macarons12:
    1. Preheat the oven to 300ºF.
    2. Pulse almond flour, salt and confectioners’ sugar in the bowl of a food processor 4 times for 4 seconds each time.
    3. Whip the powdered egg whites in an electric mixer bowl powdered egg white, granulated sugar, cream of tartar and aged egg whites, on medium-high speed until glossy stiff peaks form (about 8-11 minutes).
    4. Pipe the macaron shells. Take a pastry bag fitted with a ½ inch round tip and fill with the macaron batter.
    5. Allow macarons to form a skin. Let macarons stand at room temperature for 30 minutes until they form a skin.
    6. Bake the macarons. Preheat oven to 325 F. Bake for 10-12 minutes, rotating halfway, until cookies have risen and just set.
